How can I update the programs embedded in TC UP? For example, the SumatraPDF had a new version and keeps asking me whether I want to update it. How should I do it?

The best way would be to download newer version, unpack it with Universal Extractor and overwrite older files (all except configuration ones - INI).
You can always hold your breath and wait until next month. TC UP is updated monthly and it is very rare to have something outdated.

Also, for saving hard drive space reason, is it possible I can uninstall some programs from TC UP?

It is only possible to deselect unwanted applications during the installation.
